Why use Fermentis yeast ?



Sorghum beer is a distinctively African product. It is brewed in the hot countries of Africa where the shelf life of a beer is measured in days rather than weeks. As a result sorghum beer is brewed fresh and very close to the final customer.

Brewing in hot climates where high ambient temperatures are normal, yeast transportation is difficult as cooled distribution vehicles are both in short supply and expensive to run. The nature of sorghum beer means that fresh yeast is needed for every brew as no recycling is possible. Hence dry yeast is commonly used for sorghum beer as even at temperatures in excess of 30 degrees centigrade the yeast has a long shelf life. It can even withstand short periods at above 40 centigrade as can be experienced during transportation.

Beer is produced in large industrial breweries, micro-type breweries found in isolated industrial zones such as mining camps and as home brewing activity made either from ready-to-use beer kits or from raw materials.

A rapid fermentation is required to reduce bacterial spoilage. As the beer is of short life, fresh beer is judged by the foam generation during fermentation. No foam indicates either a lack of fermentation, or old beer.
